If you've spent time exploring bourbon, you've probably seen bottles described as cask strength, barrel
strength, or barrel proof. These whiskeys are known for higher proof and bold flavor - but what exactly does
cask strength mean?
What Does Cask Strength Mean?
Cask-strength bourbon is bottled at or near the proof at which the whiskey comes from the barrel. Many
bourbons are proofed down with water before bottling to reach a desired alcohol level. A cask-strength
expression preserves more of the whiskey's original barrel character by minimizing that reduction. The result
is generally a higher-proof whiskey with concentrated aroma and flavor.
Why Is Cask Strength Bourbon Higher Proof?
Whiskey changes throughout the aging process. As bourbon rests in charred oak barrels, seasonal
temperature changes cause the whiskey to interact with the wood. Water and alcohol also evaporate over
time - the portion commonly referred to as the angel's share. By the time a mature barrel is ready for
bottling, its proof may be considerably different from when it entered the barrel.
What Does Cask Strength Bourbon Taste Like?
Every barrel is different, but cask-strength bourbons can deliver concentrated notes such as vanilla,
caramel, toasted oak, baking spices, brown sugar, dark fruit, tobacco and leather. Higher proof doesn't
automatically mean harsh whiskey. Age, barrel selection, mash bill and maturation all influence the final
experience.
How Should You Drink Cask Strength Bourbon?
There's no single correct method. Try your first pour neat and give the whiskey several minutes to rest in the
glass. You can then add a few drops of water, which can change how aromas and flavors present
themselves. Ice is another option. As it melts, it gradually reduces the whiskey's temperature and proof. The
best way to drink bourbon is ultimately the way you enjoy it.
Why Whiskey Drinkers Seek Cask Strength Bourbon
Cask-strength whiskey gives enthusiasts an opportunity to experience bourbon closer to the way it existed
inside the barrel. It also puts more control in the drinker's hands. You can experience the whiskey at full
strength or gradually proof it down to your preference.
